Soba noodles are a type of pasta made from a mixture of wheat flour and buckwheat. They are very popular in Japan and can be consumed in two different ways. They can be served hot in a bowl of soup (kakesoba) or cold with tsuyu sauce (traditionally with bamboo, known as zarusoba).

Recipe: Kakesoba
Bring 1 liter of water to a boil and soak the noodles. In a separate pot, prepare the soba sauce.
Let it boil until the noodles become tender.
Remove the noodles from the boiling water and rinse them under cold water.
Then, place the cooked noodles in a bowl and pour the prepared soba sauce over them.
Customize to your liking (e.g., with tempura or sliced chives and a blend of seven spices known as shichimi).

Ingredients: Wheat flour, buckwheat flour, salt, yam, and starch.

[Udon 1000g(Approximately 10 servings)]

Utilizing traditional noodle-making techniques with high-hydration kneading and dough aging, this udon boasts a strong and resilient texture.

- Ingredients: Wheat flour, salt
